Q. Tell me about yourself and your business.

A. I am a chemist by trade, and I have a PhD in organic chemistry, specializing in designing & making pharmaceutical drugs & medical devices.  I’ve been baking since I was a kid, and I’ve always made gourmet desserts & fancy meals for friends and family.  As I was going through school, I would host dinner parties and was always responsible for the baked goods.

In March of this year, I realized I was tired of waiting for the end of the day or weekend to bake.  I realized that being in the lab was not my passion.  So, in March, I decided to quit my job and go into baking full time.  And for the next 3 months, I went through the process of getting all my permits and opened the bakery.

Q. What inspired you to start your business?

A. I started to realize that whenever I was stressed, I would rush home to bake.  I would experiment with recipes for fun. It helped me forget the stressful things. So I thought if this is what I loved to do most, then why not do it full time?

Q. How did you come up with the name of your business?

A. My name is Karla Sophia, and LaLa Sophia is my nickname. My family has always called me LaLa or LaLa Sophia.

Q. Where do you do your baking?  

A. At Foothill Kitchens, which is a shared commercial kitchen in Upland. I chose the Inland Empire because I live here.  There are only a few shared commercial kitchens within driving distance, and I was lucky enough to have one so close to my home.

Q. What are your aspirations for your business?

A. Since we currently operate out of a shared commercial kitchen, we must share this space with other catering companies. It’s a great start.  However, I aspire to have my own bakery within the next two years. Within the next 5-10 years, I’d like to expand to more than 1 location, especially one in Maryland, where my family is so they can operate a LaLa Sophia’s Bakery in my hometown.

Q. Do you take requests or do you give your clients options to choose from?

A. Yes, we definitely take requests. Our focus is on events and catering from miniatures to a large scale. We want our customers to know that even if they find a recipe off of a website that they wanted LaLa Sophia’s Bakery to make for them, we would be happy to create their custom order.

Q. What are your most popular items?

A. So far, customers love the lemon bars, chocolate chip w/ black walnut cookies or bars, almond cookies and double chocolate cake.

Q. What unique items or flavors do you have & how do you come up with them?

A. I do a lot of experimenting. If I see a picture of something online that looks interesting, or see something in a shop, or see anything food related, it inspires me to bake something w/ my take on it.

I used to travel a lot, and I love all kinds of food.  I’ve always been interested in the wonderful variety of sweets and spices from different cultures.  So, often I’ll use Indian spices like cardamom.  I, also, make Asian or Mexican style desserts.  I think that’s what makes us different as far as desserts go, because my baked goods are somewhat a fusion of desserts from many different cultures.

Sometimes I get a craving for something.  And the cravings are never something I can just go out and purchase.  For example my lemon pistachio cookie was something I came up with when I was craving something chewy, pistachio and with lemon.  And that’s where that cookie came from.

My mandelhorn came from my trip to Germany. I tried something similar when I was there, and had a craving for it when I got back home. Since I couldn’t buy it, I decided to whip something up with my take on what I thought was in it.  So, my almond cookie is my version of the mandelhorn.

Q. What is your favorite item?

A. My favorite is our guava and cheese tart.  I like fruit and I like cheese, so I love the combination.  I also like the flakiness of the crust, and when I make them, I make miniatures, so they’re only two bites.  They’re rich, gourmet and nothing like you’ve seen before.
